Shimanto Unagi Kabayaki

This is a gift of broiled eel from the Shimanto River, one of Japan's most famous eels. Shimanto eels are characterized by their high fat content and lack of peculiarities. The eel is so tender that it loosens in one bite. After unglazed, the eel is dipped in a thick sauce of soy sauce, mirin, sugar, and sake, and grilled to whet the appetite. Serve the eel with rice.
